Cinnamon Crumb Cake


For cake:

2 cups flour

1 tsp. baking powder

1 tsp. baking soda

¼ tsp. salt

½ cup butter, softened

1 cup sugar

1 tsp. vanilla

2 eggs

1 cup sour cream

For topping:

½ cup brown sugar

¼ cup sugar

1 tsp. cinnamon


Lightly coat a 9 x 9-inch pan with cooking spray. Preheat oven to 350° F. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

With an electric mixer, beat butter, sugar and vanilla until fluffy. Add eggs and mix well. Add dry ingredients and mix again. Fold in sour cream until thoroughly combined. In a separate bowl, mix all topping ingredients.

Spread half of batter in prepared pan, then evenly sprinkle half of topping mixture on top. Repeat layers. Bake for 40-50 minutes or until a toothpick inserted in the center comes out clean.

Serves 9
