Sheet Pan Cashew Chicken


Ingredients 1½ lbs. chicken breasts 1 (12-oz.) pkg. fresh broccoli florets 2 red bell peppers, diced ½ cup whole cashews ½ cup teriyaki sauce 3 cups cooked rice

Directions Preheat oven to 400° F. Line a sheet pan with foil and apply cooking spray.

Cut chicken into 1½-inch cubes. Combine chicken, broccoli, peppers, and cashews in a large bowl. Add teriyaki sauce and toss to coat evenly.

Spread onto prepared pan and bake for 15 minutes, stirring once halfway through. Serve over rice.

Serves 4-6
